Langres AOP is made from cow's milk Champagne cheese is distinguished by the very fine grain of its melting texture and its unique shape: a basin is hollow at its top. Indeed, unlike the vast majority of cheeses, it is never turned over during ripening, so that the humidity within its paste gradually migrates downwards, thus forming at the top of the cheese a hollow, baptized "fountain". The deeper it is, the more the cheese is refined and creamy, and therefore pronounced in taste.
Langres AOP cheese is one of the rare products in Champagne.
