When ripe, Saint-Nectaire cheese should be very supple, unhealed, and creamy. Its rind, initially covered with short, white molds, gradually turns brown or gray for the farm-produced variety. The dairy's milky taste makes it a versatile ingredient, suitable for sandwiches, tarts, salad accompaniments, or melting.
