Season: April till mid/end of August
Characteristics: This truffle has a similar skin as the black winter truffle but it’s flesh goes from white to brown when mature. It has more of an hazelnut flavor. It is better used fresh than preserved as it’s aroma is lighter.
Origin: France, Spain, Italy and Eastern Europe.
Facts: Better to use fresh as flavor is light and if cooked it will loose most of it. Shave on salads, meet or fish. Not expensive
