Saint Nectaire is a cheese made from raw cow’s milk principally from salers cow. This appetizing cheese has a thin rind covered with white, yellow, or red flowers. It has a creamy texture that blends under the finger with a delicate aroma of mushrooms & hazelnut in taste.
Saint Nectaire was made in a volcanic area, with many rivers where an abundant and varied flora grows with aromatic plants. That is what gives the milk, its distinctive local flavor
