The Comte has a brown natural rind. The paste is yellow sprinkled with white hues - the milk protein crystallized by the maturation. The texture is buttery and the flavors are rich and intense. You will get some roasted coffee aroma or a touch of dry fruits. Milk : Cow's milk. Mature time: Minimum 24 months
